Apricoconut Energy Balls

A Yummy Apricot and Coconut Snack

If you're after a snack that's low in refined sugar and nutrient dense, then try these apricoconut energy balls for a quick pick-me-up. These have just five ingredients and are ready in minutes!


Place all ingredients in a food processor and blitz until it forms a coarse crumb. Then, using your hand, mould the mixture into balls. Place balls on a tray of baking paper and then place in fridge for a few minutes until they harden. Enjoy!

1/2 cup shredded coconut

1/2 teaspoon vanilla extract
