A healthy and delicious breakfast recipe

If you're pressed for time in the morning, this recipe can be prepped overnight as well as made in advance and kept in the fridge for up to a week.

Developed by Swiss physician Maximilian Bircher-Brenner, Bircher muesli is a popular breakfast choice not only for its great taste, but also for its health benefits including energy and sustenance. Make your own with this quick and easy recipe.

Ingredients
2 cups quick cook oats
1 1/2 cups milk
1/2 cup plain yogurt
3 tablespoons lemon juice
1 apple, cored and grated with the peel
A dash of cinnamon (optional)
1/4 cup chopped nuts (we love almonds, but you can use any nuts you want)
1/4 cup fresh fruit (this can be seasonal, but our favourites are raspberries and blueberries)
1/4 cup dried fruit (we love cranberries or raisins)


Instructions
Combine oats, milk and lemon juice and let sit overnight in the refrigerator.
In the morning add the grated apple, yogurt, and cinnamon (if desired), and mix well.
Top with your favorite fresh and dried fruits and nuts.


If you don't have time to prepare this fresh every morning, you can prepare it in bulk and leave it in a sealed container in the fridge for up to a week.
